Serves 4-6 persons | Prep Time 30 minutes | Cook Time 10 minutes
10gms extra virgin olive oil
100gms finely chopped onions
650gms fresh assorted mushrooms, finely chopped
250gms cooked brown rice
2tbsps all purpose flour
3tbsps bread crumbs
Heat oil in a pan, sauté onions until translucent and add in mushroom. Cook until liquid is released. Season with ground pepper and a pinch of salt. Drain well.
After an hour of draining, add in brownrice, all purpose flour, bread crumbs and eggs. Mix well. Form into small balls and flatten a bit. Fry on one side for 2-3 minutes until some crust is achieved. Let rest on a paper lined tray.
15-16 pieces mini burger or dinner rolls, lightly toasted lettuce leaves
Open the bread/ rolls and lay lettuce leaves, top with the brown rice burger. Cover and secure with a toothpick if needed.
