Sugar-free cheesecake

Serves 8-10 persons

No baking time: refrigerated item

Ingredients
½ cup sugar-free cookies, finely crushed – 100 gms
3 tbsps melted butter – 45 gms
1 tbsp Splenda granular – 2 gms

Procedure
1. Mix well and press into containers.

Filling:
1 cup cream cheese, coarsely chopped – 225 gms
¼ cup Splenda granular – 10 gms
2 tsps lemon zest – 1 gm
2 tbsps water – 22 gms
1 pack gelatine powder – 7.5 gms
½ cup sour cream – 130 gms
50-80 gms sugar free jams (strawberry and orange marmalade )

Procedure
1. Beat cream cheese and Splenda until well-combined. Add in lemon zest.
2. Bloom gelatin powder in water. Add in cream cheese mixture. Fold in sour cream.
3. Pour into crust-lined containers. Top with sugar free jams.

Note: May lighten sugar free jams with a little water for better consistency.
