300gms tofu, sliced into 9 pieces canola oil
2pcs egg plant, sliced salt and freshly ground pepper extra virgin olive oil Sriracha sauce
9pcs mini monay
Fry the tofu in canola oil until brown on all sides. Let drain in a paper lined plate. Set aside. Mix the eggplant, salt, pepper and olive oil. Lay on a baking sheet and bake in a preheated 350 0F oven for 15 minutes. Then drain. Set aside.
Slice monay in half and open well. Spread some Sriracha sauce on one side of the bun. Put tofu slices and top with baked eggplant. Cover and serve.
